Job Description
We are seeking a full-time Specialist Steak and Seafood Chef to lead the preparation and presentation of premium steaks, fresh seafood and other high-quality dishes. The role includes maintaining consistent cooking standards, assisting with menu development, controlling food costs and wastage, ensuring food-safety standards, and training local kitchen staff in specialist cooking techniques.

Wahoo Seafood & Grill is a waterfront restaurant located in Havannah Harbour, Vanuatu. We specialise in fresh local seafood, premium steaks and quality island-style dining, along with cocktails and a full drinks menu. Our focus is on delivering excellent food, friendly service and a memorable dining experience for both local customers and international visitors.
Selection Criteria
- Minimum 5 years’ professional kitchen experience in a busy restaurant, hotel or resort
- Proven experience specialising in premium steak and seafood preparation
- Strong knowledge of steak cuts, grilling techniques and cooking temperatures
- Skilled in fish filleting, seafood preparation, handling and presentation
- Recognised culinary qualification or equivalent professional experience
- Experience developing menus, recipes and consistent plating standards
- Knowledge of food costing, portion control, stock management and waste reduction
- Strong understanding of food safety, hygiene and kitchen compliance
- Experience supervising and training junior or local kitchen staff
- Ability to maintain quality and consistency during busy service periods
- Good communication skills and ability to work effectively in English
- Reliable, organised and able to work independently in a remote island location
- International hotel, resort or high-quality restaurant experience preferred
